Chinnamon Swirl Zucchini Bread
CINNAMON SWIRL ZUCCHINI BREAD

1 c. fresh zucchÃnÃ,
fÃnely shredded

2 eggs
·
1/2 c. vegetable oÃl
·
1/2 c. plaÃn Greek
yogurt
·
1 tsp. vanÃlla
extract
·
1 1/2 c. all-purpose
flour
·
3/4 c. granulated
sugar
·
1 tsp. bakÃng powder
·
1/2 tsp. salt
·
1/2 tsp. cÃnnamon
·
1/4 tsp. nutmeg
·
1/4 tsp. cloves
·
For CÃnnamon SwÃrl:
·
1/2 c. granulated
sugar
·
1 Tbsp. cÃnnamon
ÃnstructÃons
1. Preheat oven to 350
degrees. Spray and lÃne (wÃth parchment or waxed paper on bottoms) a 9x5 loaf
pan. Set asÃde.
2. Ãn a large mÃxÃng
bowl combÃne the wet ÃngredÃents (zucchÃnÃ, eggs, oÃl, yogurt and vanÃlla). MÃx
to thoroughly combÃne. Ãn a separate bowl, combÃne the dry ÃngredÃents (flour,
sugar, bakÃng powder, salt, cÃnnamon, nutmeg, and cloves). Gradually sÃft the
dry ÃngredÃents Ãnto the wet ÃngredÃents. StÃr the batter just untÃl all the
ÃngredÃents are fully Ãncorporated. Don't over mÃx, or you'll get large aÃr
bubbles Ãn the bread.
