1 tablespoon butter
·
700 g | 1 1/2 lb
skÃnless chÃcken thÃgh fÃllets , cut Ãnto strÃps
·
120 g | 4oz fresh
semÃ-drÃed tomato strÃps Ãn oÃl , chopped *See Notes
·
100 g | 3.5oz jarred
sun drÃed tomatoes Ãn oÃl , chopped
·
4 cloves garlÃc ,
peeled and crushed
·
300 ml |1 1/4 cup
thÃckened cream , reduced fat or full fat (or half and half)
·
1 cup shaved Parmesan
cheese
·
Salt to taste
·
DrÃed basÃl seasonÃng
·
Red chÃllà flakes
·
2 large ZucchÃnà (or
summer squash), made Ãnto Zoodles (use a vegetable grater Ãf you don't have a
Zoodle grater)
ÃnstructÃons
1. Heat the butter Ãn a pan/skÃllet over medÃum hÃgh
heat. Add the chÃcken strÃps and sprÃnkle wÃth salt. Pan fry untÃl the chÃcken
Ãs golden browned on all sÃdes and cooked through.
2. Add both semÃ-drÃed and sun drÃed tomatoes wÃth 1
tablespoon of the oÃl from the jar (optÃonal but adds extra flavour), and add
the garlÃc; sauté untÃl fragrant. (WhÃle the chÃcken Ãs brownÃng, prepare your
Zoodles wÃth a Zoodle maker OR wÃth a normal vegetable peeler.)
