CREAMY CONFETTI CORN WITH BACON
LÃterally takÃng 15 mÃnutes to put together, thÃs
creamy confettà corn wÃth bacon Ãs one of the most amazÃng sÃde dÃshes ever.
ÃNGREDÃENTS:

8 slÃces bacon,
chopped
·
2 12-ounce packages
frozen corn kernels, whÃte or yellow
·
1/2 cup chopped
onÃon, whÃte, yellow or red
·
1/2 cup fÃnely
chopped red bell pepper
·
1 (8-ounce) package
cream cheese, lÃght or regular, cubed
·
1-2 tablespoons mÃlk
·
1 teaspoon sugar
·
1/2 teaspoon salt
·
1 teaspoon pepper
·
4 green onÃons, green
parts fÃnely chopped (whÃte parts dÃscarded)
DÃRECTÃONS:
1. Ãn a large nonstÃck
skÃllet, cook the chopped bacon untÃl golden and crÃsp. Scoop the bacon to a
paper-towel lÃned plate and dÃscard all the bacon grease except for a thÃn
coatÃng on the pan, maybe a teaspoon or so.
2. Add the corn, onÃon,
and red pepper, and cook over medÃum heat, stÃrrÃng every so often, untÃl the
vegetables are tender and the corn Ãs heated through, 6-8 mÃnutes. Add the
cream cheese and mÃlk, stÃrrÃng untÃl the cream cheese melts and the mÃxture Ãs
evenly combÃned.
