POPOVERS RECIPE WITH BACON AND GOAT CHEESE


Light-textured and full-flavored, this Popovers Recipe with Bacon and Goat Cheese is the perfect addition to any bread basket. They’re easy to make, too!

POPOVERS RECIPE WITH BACON AND GOAT CHEESE

Ingredients :
  • 1 cup mìlk , room temperature
  • 3 strìps bacon , cooked crìsp and crumbled
  • 1 tablespoon chopped fresh chìves
  • 3 ounces goat cheese
  • 1 tablespoon unsalted butter , melted and cooled slìghtly
  • 1/2 teaspoon freshly-ground black pepper
  • 3/4 teaspoon kosher salt
  • 1 cup all-purpose flour
  • 2 large eggs , room temperature
  • cookìng spray , for greasìng pans
Instructions :
1.  Preheat oven to 425 degrees with rack in the lower third of the oven. Place a 12-well popover pan (preferred) or a standard, nonstick 12-cup muffin tin into the oven, on a lined baking sheet, to heat.
2.  In a small bowl, stir together goat cheese and chives. Set aside. Measure out flour, salt, and pepper, and set aside.
3.   In a large bowl, vigorously whisk together milk and eggs until frothy, 1-2 minutes. Add flour, salt, and pepper, and whisk until just combined and only small lumps remain. Whisk in melted butter. Batter will be relatively thin, with the texture of cream.
